Ying and I landed in Singapore, and we quickly stopped at our hotel to drop off our main bigger bag, and then after that we headed straight to Little India to eat at The Banana Leaf Apolo, which is one of the legendary restaurants in Singapore that serves the dish. Fish head curry has an interesting and unique history in Singapore… it’s said that there was an Indian chef who had a group of Chinese customers that he needed to cook for. He knew the fish head was a delicacy in Chinese culture, and so he decided to cook a fish head, but use Indian style curry. His idea went perfectly, so perfectly that today it’s one of the main iconic dishes in Singapore, and it’s the single handed dish that I would go straight from the airport in Singapore just to eat – which is exactly what we did.

The Banana Leaf Apolo is a longstanding south Indian restaurant in Singapore, and although they now have a couple of branches, the old main branch is in Little India along Race Course Road. They have a full menu of different Indian dishes and they also have a cabinet full of pre-cooked dishes to order as well, but it wouldn’t be right to go there and not eat fish head curry. There were a couple of different fish head sizes, but I couldn’t resist ordering the biggest size. The fish head curry was excellent, and it wasn’t too oily or rich. Instead, it was almost like an incredibly spice filled broth, it was both thin and flavorful, and it went extremely well with the soft red snapper head of the fish.

I’m a huge fan of fish head curry in Singapore, and The Banana Leaf Apolo does a very good version of it.

The Banana Leaf Apolo

  1. Mark, you are one of the great gourmets! Your enthusiasm for the sublime Fish Head curry is perfect! Whenever I go to Singapore, I also head straight to Banana Leaf Apolo or to one of the other great places and I have Fish Head Curry, too.

  2. .wow! These delicious seafood curry dishes in Singapore looks so scrumptious . You’re right Mark, I will eat this
with my hands too. Especially, the fish head curry. Although , I think I prefer the fish head curry with such a creamy curry buttery sauce in In Indonesia . Thanks for the comparison… ???❤️

  3. Now that I've watched a couple hundred of your videos, I can tell when you truly like a dish as compared to when you think it is just okay or even when you do not like it at all.

  4. My favourite place to eat for authentic Indian food! The fish head curry is the bomb! You forgot to order the fried fish cake, that is really good! My dad brought me here since I was little and we went there again after I had my son. It has been years and it's always my go to restaurant for really delicious Indian cuisine. For Malay food, you should try Hajah Maimunah Restaurant located beside Joo Chiat Complex. They have all sorts of Malay dishes but it can be as costly as Banana leaf apolo. It's worth every penny for delicious food! Something you can't find elsewhere is Chilli Crab with fried mantou and Tulang merah (red bones) indian dish at beach road. It's only available in Singapore. 🙂

Just to correct. Fish head is very Essential dish in West Bengal from years and years back. no marriage is complete without Fish Head Dish. ….!

  7. The real story about the invention of fish head curry.
It was back in the 1950s at a Chinese coffee shop along Selegie Road. There was an indian who was selling Indian food there. After sometime he decided to leave but the Chinese coffee shop owner decided to make curry(after absorbing curry skills} because of its popularity. Being Chinese he decided to make curry using fish head. For a few years the only fish head curry was available there. I ate there in the early 70s
