Only processed carb available and suitable during war time was noodle which usually consumed by Chinese community, was perceived as Chinese delicacy and usually cooked in a form of noodle soup. During the critical time when Thai identity needed to be strengthened, the gov, therefore, introduced “Thai way” to cook the noodle for Thais.
