Steam 400 lbs of lobster for roughly 20 minutes. Take the green stone crab and grade them (we did red because we didn’t have green). Place them in bags and stick in the steamer to cook for 9 min, then stick in the ice bath for about 6 min. Then bag them and pack in the cooler and then exteriors.

🦐 SEAFOOD TOWER:
Ingredients include; Florida Stone Crab, King Crab, Jumbo Shrimp, Oysters, Florida Lobster tails, and Jumbo lump crab meat.

🦀 KEY WEST GROUPER:
Lightly sautéed in a hot pan. Season with salt and pepper. Deglaze with white wine. Add Butter, and thyme. Finish in the oven for about 15 minutes. Plating consists of; Jumbo Lump crab meat, Grouper, Jumbo Shrimp, Avocado, Beurre Blanc (white wine lemon butter), Topped with greens.

  4. Please don't use AI, Sonny. I've been watching your videos for years now and they've all worked perfectly fine without it. It looks terrible and it looks like you're trying to cut corners. And we know you have the budget to pay for stock footage if need be. Or just use some candid B-roll shots like you usually do. Sorry if I sound mean, just trying to give some constructive criticism from an honest fan. AI generated stuff is not a good look for your channel.

  7. I grew up in Thibodaux Louisiana and I absolutely can not stand when seafood is served cold unless it’s raw tuna, or poke’ bowls and that was something my cousin from Panama City introduced me to.

  9. The spiny lobster from Southern California and the pacific side of the Baja is even better than Maine or Florida. I love them all but I’ll take a spiny lobster from the Baja over the other 2 any day.
