Great work you do Takis, with dogs that are afraid it is good to sit on the ground with them and not stand above them but I know you know this, and you are trying to film as well, so it can be hard to sit on the ground and get on the level with the dog. Generally the lower you are to the dog, the less they feel threatened if they have been treated badly.
So happy Jerry is safe, he isn't used to love and affection or kind words, but soon will be bless him x

He looks like a Brittany- I have raised and still have Brittanys. Very, very sensitive, easily frightened, anxious- once they are hurt- it takes much to help them. He can be fine, but you really have to be consistent and VERY GENTLE. He's aggressive, because he is absolutely terrified. Even more so than other dogs. What a handsome boy-yes, a hunting dog. so sad to see him so abused. No loud voices, no quick moves- Takis knows. Try rescue remedy for trauma. Homeopathic- no interactions. I have seen people try to break the spirits of these dogs. SO SENSITIVE.
