🇯🇲 ESCOVITCH YELLOWFIN TUNA: Clean and gut the fish. Season with a blend of five different seasonings (white pepper, salt, seasoning salt, fish seasoning + special seasoning and all purpose seasoning. Fry on both sides. Add special escovitch sauce on top.

🇯🇲 STEAMED BAMMY: In a large pot, add scallions, onions, carrots, all-purpose seasoning and butter. Add milk. Add bammy and allow it to steam.

🇯🇲 STEAMED LIONFISH: De-spine and clean the dish. Score the fish. Season with salt and pepper. Add scotch bonnet and thyme. Add scallion. Add onions in the ridges. Add garlic on top.
In a pan, add olive oil. Allow it to get hot. Add fish to pan and sauté for a bit. Flip as needed. Add bell peppers on top: add scallions. Mix. Add more oil. Add more garlic. Add water.

  1. It is kinda funny when you say that the puffer fish is poisonous haha.. I mean there are many species of puffer fish and some of them are really poisonous but that kind which has the sting all over its body is the delicious one of them all, that is actually a delicacy here in the Tawi-Tawi Philippines,, we cooked it the other way and the best way.. hope you'll experience one day.😊💙

  2. The very most of the organic toxins are based in proteins..That means if you heat them over Sixty degrees Celsius they will lose their toxic effect. Since puffer fish are prepared raw for sushi, that's a completely different deal.
