🇯🇲 PAN CHICKEN: Season the meat with jerk sauce and leave for 3 days. Prepare the jerk pan and place the seasoned meat above the fire. Turn after 5-8 minutes

🇯🇲 WHOLE JERK UNDERGROUND HOG: Clean the whole hog. place it on a flat surface and then season with store-bought dry rub (dry jerk rub). Add another dry jerk rub (his secret recipe- he calls it cocoa butter). Leave it to marinate for a few minutes. Add sugar to make sure the skin gets crispy with a sweet taste. Place in the underground oven with pimento leaves.

    Yeah, if the person cooking it knows how to cook it properly & not over cook it to the point of being dry as a rock, it will always be that way…

    I'm so sick of this nonsense, chicken breast is never dry, IF it's not overcooked

  5. Jerking the whole pig is where it all started. As a child growing up in the early 70's, we only knew jerk pork and it had to be from Boston in Portland to be authentic. Pork was cheap, fatty and locally grown, while chicken was more reserved for Sunday dinners because of the price.
