MAE HONG SON, THAILAND (แม่ฮ่องสอน) – Welcome to Mae Hong Son (แม่ฮ่องสอน), located in the very northwestern corner of Thailand. Today, we are visiting a Hill Tribe Village of the Lawa People (ลัวะ). While many people groups in Northern Thailand trace their ancestry to South China (Yunnan) and Myanmar, the Lawa People (ลัวะ) are an indigenous to Thailand. They are cooking a unique dish, which is called to-sabuak, basically a boiled meat salad full of local herbs. Ban La Oop Village (บ้านละอูบ) is located near Mae Sariang in Mae Hong Son Province of Thailand. The village itself is spectacularly beautiful, on the peaks of mountains where they grow beans, starches, and now coffee. When we arrived they were ready to get started for our main dish. To make it, they simply boiled pork in water until it was fully cooked. I think one of the main key steps though was the roasted chilies which were charred before being pounded. When the pork was ready, they sliced it all up, and mixed it with chilies, lemongrass, coriander, and salt. The result was basically a pork boiled salad, full of vibrant local herbs.

It dawned on me, this could really be an original food of Thailand, an ancient method of cooking and simple technique of combining meat with herbs for seasoning.

It was delicious, simple, and satisfying.

It was also really cool to hang out with the Lawa People (ลัวะ) and especially to hang out with Aunty!

  1. I'm from the northeast state of Nagaland, india and I'm amazed and surprised that it's very much similar to us,from food-clothes-features-house-style-hill top, literally everything. Even the necklace the woman is wearing it's similar with naga traditional necklace. I hope Mark will visit NE states soon❤❤

I would like to let my young bro & young sister back home in Philippines to try this style of cooking, they like to cook..which they have passion for it..I remember my brother told me back in the 80's while there's no film shooting he normally cooks at the Carinderia inside Balintawak Market, he said he can prepared 10 kinds of foods at the same time that how busy the Karinderia../Restaurant. Then if there's a film shooting he goes among actors & actress because he used to be an stuntman.

    Mr. wiens I am from North East part of India. We live exactly the like the lawas people our foods and the hand woven wraparound it’s all the same. I am amazed to see that culture in different county. You are always welcome to visit my hometown.

  10. I think there must be connection in our origin , am a nagas and there food and dresses almost the same, I wish I can explore , how on earth are we so similar

  11. the house and the village setup, the people, the knief, the herbs all look so much like a village from Northeast India.. it must be true that people of Northeast India had come from Yunan china, the northern part of Thailand and from Burma.. looks so similar. Amazing
