MODERN HAVANA

1. EL CAFE
ADDRESS: Amargura #358, E/ Villegas y Aguacate, Havana

??BANANA OMELETTE: Mix two eggs and add chopped bananas. Prepare on the stove. Add chopped avocado and tomato on the side with pepper and olive oil drizzled on top.

??PORK: Lay out two pieces of lettuce. On top, add yucca, green onion, pulled pork, gravy and chopped onions.

3. CAFE D LA ESQUINA
ADDRESS: 101 Ave Paseo esquina, Calle 5, La Habana, Cuba

??PICO LA ESQUINA: Mix yeast, water, flour, salt and pure soy oil. Place flour on the counter. Get a ball of dough, knead it and roll it out (like pizza). Place cheese, ropa vieja and plantain maduro frita in the middle. Fold in half and cut around the outer edge. Place in the oven and allow it to get golden brown. Spread a bit of olive oil on top.

??HABANERO ROLL: Roll out the pizza dough, add black beans, picadillo a la habanero and cheese. Roll it all up and place it in the oven to cook. Serve with salad.

5. TAPAS FAC

??CUBANO: Start with baguette bread. Add gouda cheese, roasted pork, smoked pork, lettuce, pickles and spicy mustard. Put in the griddle to cook (until golden) then allow it to cool. PORK MARINADE: Marinate pork for 24 hours in orange and lemon juice, mint, rosemary, garlic, pepper and ginger
