  2. this looks like a Brazilian food called "buchada" (also called Dobradinha in some states)… but here we don't use the fish sauce and they also do it with goat meat

  3. "In the west people shy away from cow organs"… don't mix all "western people together", dear sir, more than one country that is not the U.S.A. have dishes with all kind of organs in their cuisines.

  6. A little help for your friend: "gamey" literally means "like game," as in "wild game," as opposed to "farmed." But yes, it's also often stronger, but the general flavor is more "grassy" than anything else. That's because most wild ungulate game feeds on grasses, and animals tend to taste of what they eat.
