  2. this looks like a Brazilian food called "buchada" (also called Dobradinha in some states)… but here we don't use the fish sauce and they also do it with goat meat

But yes, it's also often stronger, but the general flavor is more "grassy" than anything else. That's because most wild ungulate game feeds on grasses, and animals tend to taste of what they eat.
