That's a terrible idea. If you wanna sucker punch a dude and get maulded, this is the way to go though.
He's taller, bigger, you pretend to make up and be friends, and then slap him on the cheek? Now you're in for some real trouble. I understand the dummy fell because…you know…gravity? But a guy like that might not go down and then what you gonna do? I suggest you run.
You either preempt your attacker, or protect yourself in your counter attack.

Not sure I'd recommend using a head butt, if the other person is quick you can easily get badly hurt. The problem with these sort of videos is it gives the idea that the 'bullies' are always poor fighters. That isn't always the case.

Umm putting your hands up and the stance are all really good along with saying words to de-escalate. The main focus should be to de-escalate by either cooling the guy down or by recruiting allies. However if it does escalate the follow up has some problems to recognize.
For item 1: I wouldn’t offer to shake their hand because if they take it and you land the first strike they can claim assault and battery against you. Unfortunately, you have to let them throw the first strike. So that’s where keeping up your hands is a good idea. Also keep in mind that offering a limb to an enemy puts you at a disadvantage as they can grab it for the exact same thing you want and now priority is on their side because they are the one grabbing. So the slap is no good to initiate with. It is good if they try and fail to hit you.
2. Solar plexus. Same comment as before.
3. Head butt. I would avoid if you haven’t trained it because it’s a high skill technique it requires surprise because you can accidentally knock yourself out either missing or getting countered with head leading attack. It’s situational, if you know they can’t move their head out of the way. It should be replaced with roundhouse shin kick or stomp kick to the knee or shin. They are fast and so much stronger and a bad aim is less detrimental but the reward is the same.
4. Hook punch. Same comment as the slap because it’s a similar body motion with less range and different striking surface as a slap. It’s preferable where you’re in a tight space and a slap would be jammed.
Simple techniques can get you out of the jam, slap, hook, elbows, round shin, stomp kick, but definitely be prepared with some grappling familiarity to escape or to end it.
And yes any technique can stop a fight but you need to use Pareto principle here: the lowest cost technique for the most benefit. Head butt is not one of them. The other strikes are okay but should be prepared to be grabbed or to miss. Punching bobs are static and most boxers spend time tanking some punches to land theirs. The rest of us don’t and will try to avoid assuming all those punches will put us down.

Long story, all 4 techniques are sucker punch/headbutt/slaps. Essentially, all 4 techniques are the same thing — do the, "I surrender, sucker".

Some people freeze up. I'd be one of those people. Even though I've been in fights and have won fights doing the unexpected, I do have a tendency to freeze up. It's that deep-seated fear, fight or flight. Better not to fight,. I'm in my '60s now remembering what it was like in my twenties. Better be a lover, but if you need to, this is a good video for the layman. Thanks

The best form of attack is from a defensive stance. Jerks go looking for fight, and they are usually dumb enough not to see it coming. People asking for tips in a fight are not really interested in defence, but are looking for a fight. I guess they learn the painful hard way!

The open hand slap is included in the Kyokushin Karate arsenal, meaning it is considered dangerous ; however, it has to be trained, wether by slapping a sandbag or a wall or a treetrunk, it must give you confidence in your ability to cause (at least) temporary loss of equilibrium/balance in your assailant.
