5. The Pizzoccheri are traditionally NOT made with Parmesan. Parmesan (Parmigiano Reggiano) come from Pianura Padana. Usually Pizzoccheri are made with cabbage (verza), potato, butter, garlic and cheese like Bitto. They have a more Deep flavour and are more proper from alps. But for sure, straight from a cheese Wheel Is more fun and Spectacular.
