🐌 *GINGA*
(Soft-Shelled Snails Stew):
Boil GINGA. Sauté aromatics. Add snails and stir-fry. Close lid. Add salt & pepper to taste.

🦗 *KHACHIW with CHAJAP*
(Fish Soup with River Crickets):
Boil KHACHIW (Fish) and CHAJAP (Cricket). Sauté aromatics. Mix them together.

*2. Mayoyao Japanese Eel Hatchery*

🇯🇵 *PIKAW*
(Japanese Eel):
The Japanese Weather Loach (PIKAW), was introduced by the Japanese in the Philippines during WW II. In Cordillera, it was historically abundant in rice paddies, however due to commercialization the reproduction of the PIKAW depleted.

*3. Local Cafe*
INTERVIEWEES: Fidel (Eel Hatcher)

🪱 *PIKAW*
(Japanese Eel Stew):
Sauté aromatics with some Liquid Seasoning. Stir-fry with PIKAW. Add coconut milk and water. let simmer for about 10-15 mins. Add String Beans, Fish Paste, Onion, Green Chili.

🔥 *DEEP FRIED PIKAW*
Deep-fry PIKAW in Oil in 10-15 mins, or until golden brown and crispy enough. Salt and Pepper. Serve with sauce made from Vinegar and Burned Garlic.

*4. Bongan Rice Terrace*

🏏 *LATEG TI BAKA / SOUP NUMBER 5*
(Beef Bats and Balls):
Boil cow penis and balls for 30 mins, then drain. Sauté aromatics. Add water. Add penis and balls back to the pot, then more water. Salt to taste. Close lid, and boil for another 45 mins – 1 hour.

🍲 *PAPAITAN*
(Cow Bitter Soup):
Clean organs thoroughly then boil. Remove from pot and chop into smaller pieces. Sieve juice from stomach into bucket. Sauteé aromatics. Remove some Ginger and use for the penis soup. Add the organs back to soup. Add a little bile and sieved stomach juice to the pot. Add salt to taste and green chili.

🐮 *SUNGO*
(Cow Nose Soup):
Remove head and preserve its entirety. Boil water & add salt.
Put head in & boil for 2 hours.

  2. I've had papaitan as a kid. It was goat. I've watched the slaughter of the goat. I hated every bit of it. The goat diniguan that they made though was pretty good.

  3. I was watching this on the toilet, skipped ahead a bit but indeed it made me gag – I could smell it through the screen! Oh wait that was me…

  4. Pressure cooker to soften the meat, then coconut shell for soup bowls. Its overkill😂😂
    Should have just stayed wirh using the usual plastic or glass bowl. Sonny, you overdid this😂😂😂

  5. Yow…. I’m from the Philippines and I love Papaitan. I know that it’s sounds and looks disgusting in terms of the ingredients they use but when you taste it when it’s finally cooked? it’s pretty damn delicious. Don’t let the ingredients fool you. Just pair it with rice cooked from last night’s dinner called “bahaw” and you’ll have a treat ahead of you 😉
