đĩđĒJUANE DE GALLINA: Clean, de-skin, and de-feather a hen. Gut and chop it. In a bowl, add soy sauce, salt, achiote, chicken stock, cumin, garlic and basil and mix it with the hen. Fry the seasoned chicken for 20 minutes. | Rice seasoning: In a frying pan, add oil, then mashed garlic and achiote. In a plastic tub, add rice and mix with the seasoning. In a bijao leaf, add seasoned rice, a piece of chicken, and an olive. Cover in more seasoned rice and wrap. Boil for 15 minutes.

đĩđĒPATARASHCA DE PIRAÃA (PIRANHA PATARASHCA): Score the piranha, remove the guts, and place in water to clean it. Place in a clean bowl, and add salt, sachaculantro (local cilantro), cucumbers, tomatoes, onion, and mix. Wrap the piranha with the mixture in bijao or banana leaves.

đĩđĒMAZAMORRA DE CARACHUPA (ARMADILLO PORRIDGE): Over the heat, scale the armadillo.Chop into pieces (legs, tail, head and body) | Soup: Chop the body. In a pot, add water, plantain, and armadillo. Add salt. Add shredded papaya. Boil for 30 minutes. | Grilled armadillo: chop the legs, tail, and head. Add salt. Grill for 30 min.
