  2. TYPICAL. Foreign chef comes to America. Finds ethnic food here, and simply must "improve" with his own "take" on it. Misses the mark, but still jacks the price. Like the violin, which has not changed shape for centuries as it was perfected long ago… no need to change New York Soul Food, as it was perfected long ago.

  5. I’ve never been to a “fancy” soul food restaurant that had food I wanted to try again. Regular soul food spots with aunties and grandmas in the kitchen always got the best food
