  1. The fermented noodles is just fish Khao Poon, we have it in the US and even that Thai version are available. You just need to go to authentic restaurants and not the Americanize Thai restaurants.

  3. You guys can't eat real Isan food, it's spicy and weird. What you see is only 10% of Isaan food. If you want to go deeper, think of Bear Grylls.

  4. For that fermented noodle, the noodle itself (Khanomjeen) is actually found all over Thailand, all over Southeast Asia even. It was a Mon noodle, and since Mon people used to be everywhere in Southeast Asia, it is found everywhere too. What each place makes the dish theirown is the way each place makes the soup or sauce for the noodle.
