  1. Honestly the problem with Black African food is that you are playing a roullete game. You never know (unless you have experienced it) how the food will turn out. It's always random, sometime sit's edible and other times it outright sucks. You are then left to rely on expensive restaraunts, so really african cusiine, especially black african apart from west africa is a no go.

  2. African food in general but with a few exception like senegambian or to an extent swahili coast, etc are bland, lack seasoning and culinary techniques. Most things are boiled and or fried with onion and not even garlic or ginger lol.

  7. The reason rare or medium-rare meat isn't popular in Africa isn't because we don't like the taste — it's because we don't trust that it's safe. Generations of overcooking meat wasn't about flavor, it was about survival. We were taught that pink meat equals sickness, and so we charred everything just to be sure.

    But what if that fear is outdated? What if the rest of the world isn't reckless, but simply informed? If the meat is fresh, the process is clean, and the method is proven — then maybe it’s not unsafe to try medium-rare. Maybe it’s just unfamiliar. We say we want better food experiences — sometimes that means unlearning fear and trusting the science. Be brave. Don’t just cook — learn how to cook well.
