You should try the Lousiana Crawfish that are soaked in spring water for a couple of days and washed. Fesh clean taste.
What the heck is wrong with Vietnamese cuisine that tries to extract the most suffering from an animal before they eat it. It's like they get a kick out of having an animal watch itself be eaten. Also covering an ingredient as beautiful as a lobster with processed cheese is the height of disgust and disrespect for something so good and luxurious. Charging high prices after butchering an ingredient that good is just sacrilege.

I'm from Western Australia, we export Southern Rock Lobster to China.
The Ornate lobster is an inferior lobster, we have Jumbo red lobsters here as big as a scuba tank.

The Slipper Lobsters, we call "Bugs", we have 2 in AUstralia, Moreton Bay Bugs, and Balmain Bugs. The Aussie "Red Lobster" you called it, is a crayfish. There's a few varieties, but they are not lobster mate. Definately similar, but no claws. The colder the water, the sweeter the meat. Love ya work, pretty to watch lol. Do not put Vegemite on Crayfish. x The last one, is what we call a painted cray, and nowhere neare as nice as a Tasmanian Cray. Like I said, the colder the water, the sweeter the meat mate. You're also paying silly prices in silly places for stuff you can just go catch for free (with a recreational dive license, depending where you are)

I went to Kau Ba today, and they did a bait and switch on me. I ordered the crawfish from the picture menu (checked that what I was ordering was the crawfish 3 times), but they gave me a shrimp this instead. After I complained, they gave me a slew of excuses. You shouldn't even put this restaurant in your video. It undermines your credibility.
