The broth is supposed to be plain, you can add fish sauce in the broth to make it more flavorful.
I love all vietnamese noodles.. all are delicious but i don't eat on the street
why i don't see any Mộc in your bowl, it is essential and very unique

i made the video of Vietnamese street food under 5$. Can you believe that? All are under 5$
yeah, the "Moc" is the most main thing of this noodle but they didn't give you this. Moc is also a very special thing that if you are a Vietnamese, you'll find yourself so hard to find a right good Moc. Just to tell you that you didn't eat the right bun moc, haha.

You should deep the vegetable into the soup right away when it is passed to you, and the purpose is to boil the vegetable a bit.
